About the Recipe

It's the perfect little sweet treat you've always wanted - simple, satisfying, but still healthy! This Frozen Yogurt Bark is great for sharing too (although we doubt you'd want to).

Ingredients

  • 500g fat-free Greek style yogurt 

  • 1 teaspoon vanilla extract, optional 

  • 100g fresh blueberries 

  • 100g fresh strawberries, hulled and cut in half 

  • 30g shelled pistachios, roughly chopped 

Optional toppings

  • Prepared granola 

Preparation

  • Line a shallow baking tray or dish with baking parchment paper.

  • In a medium to large mixing bowl, add the yogurt and vanilla extract and stir well to combine. 

  • Pour the yogurt mix into the lined baking tray or dish and spread out evenly over the parchment paper. 

  • Sprinkle over the fresh fruit and top with the pistachios.  Add any additional toppings too. 

  • Transfer the tray or dish to the freezer, and freeze for at least 3-4 hours, until completely frozen. 

  • Remove from the freezer and lift the baking parchment paper from the pan or dish, and peel away from the frozen yogurt. 

  • Break into pieces and serve immediately or store in an airtight container in the freezer until ready to enjoy. 

Tip:

If you prefer a more brittle and dense bark, add 200ml milk to the yogurt.
