About the Recipe
It's the perfect little sweet treat you've always wanted - simple, satisfying, but still healthy! This Frozen Yogurt Bark is great for sharing too (although we doubt you'd want to).

Ingredients
500g fat-free Greek style yogurt
1 teaspoon vanilla extract, optional
100g fresh blueberries
100g fresh strawberries, hulled and cut in half
30g shelled pistachios, roughly chopped
Optional toppings
Prepared granola
Preparation
Line a shallow baking tray or dish with baking parchment paper.
In a medium to large mixing bowl, add the yogurt and vanilla extract and stir well to combine.
Pour the yogurt mix into the lined baking tray or dish and spread out evenly over the parchment paper.
Sprinkle over the fresh fruit and top with the pistachios. Add any additional toppings too.
Transfer the tray or dish to the freezer, and freeze for at least 3-4 hours, until completely frozen.
Remove from the freezer and lift the baking parchment paper from the pan or dish, and peel away from the frozen yogurt.
Break into pieces and serve immediately or store in an airtight container in the freezer until ready to enjoy.
Tip:
If you prefer a more brittle and dense bark, add 200ml milk to the yogurt.
