About the Recipe
This soup is such a comfort favourite - easy to whip up and great for a light meal. Give it a go, you won't be disappointed.

Ingredients
200g frozen peas
250g prepared mashed potatoes
250ml semi-skimmed milk
200ml low sodium hot chicken or vegetable stock
Small handful of freshly chopped mint or 1-2 teaspoons dried mint
1 small garlic clove, peeled and crushed or 1 teaspoon garlic powder

Preparation
In a large saucepan, add the peas, mashed potatoes, milk, chicken or vegetable stock, mint, and garlic (or garlic powder).
Cook gently over a medium heat for 8-10 minutes until piping hot, stirring occasionally. Season, if required.
Blend the soup in the saucepan using a stick blender, or transfer to a blender and blend until smooth. If the soup is too thick, add a little more milk or chicken stock to reach your desired consistency.
Pour into warmed bowls and garnish with the croutons.
